What you eat is important for attaining weight and health goals. Optimal digestion is crucial for absorption of the nutrients found in food. Digestion begins in the mouth, where teeth begin to break down the food. Enzymes in saliva help the process along. Once the food is chewed into small enough pieces, it is swallowed and moved by a process called peristalsis to the stomach.
